VEGAN OMELETTE

INGREDIENTS

  • 1 cup chickpea flour

  • 1 cup of water

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 pinch of black pepper

  • ½ teaspoon yeast

  • ½ teaspoon of saffron

  • Salt to taste


PREPARING THE DOUGH

In a bowl, mix all the dry ingredients well, then add the water little by little until you get a smooth consistency. If you prefer, you can do it in a blender. See? Super easy! From here on, just make it as if it were a traditional omelet. Pour it into a frying pan greased with oil, let it cook for about 2 minutes and turn it over until golden brown. That's it!


FILLING

For the filling, let your imagination run wild. I prefer to use fresh ingredients that are easy to prepare, ensuring authentic flavors and a balanced combination. One of my favorite combinations includes sliced avocado, with its creamy and smooth texture, combined with diced tomatoes, which add freshness and a slightly sweet touch. For contrast, I like to add sauerkraut, which offers a striking acidity, and fresh cilantro with a vibrant flavor, finely chopped. All this is drizzled with a generous drizzle of extra virgin olive oil and salt. Perfect simplicity for those looking for convenience without sacrificing flavor. It's that simple!
