INGREDIENTS - PART 1
1 cup chopped onion
2 ½ cups chopped portobello mushrooms
1 cup cooked black rice
4 tablespoons Barbecue Sauce
1 tablespoon liquid smoke
1 ½ cups oriental style breadcrumbs
1 bunch of chopped parsley
½ tablespoon paprika
salt to taste
vegan butter

1 bunch of arugula
1 kilo of red onion
vegan cottage cheese
1 avocado
2 tomatoes
hamburger bun
parchment paper
PREPARATION
Do you want to try something different and tasty? Follow the step by step and transform the ingredients into an irresistible meal!
To save time, start by cooking the rice according to the package instructions. When it's ready, transfer it to a plate and, with a fork, mash the grains until they are broken and no longer have a defined shape. Set aside.
Slice the red onion thinly and spread it out on a baking sheet. Season with salt, black pepper and a generous drizzle of olive oil. Cover the baking sheet with parchment paper to keep it moist and bake in a preheated oven at 180ºC for about 30 minutes, or until the onion is soft and juicy.
In a frying pan, sauté chopped onion until golden brown. Add the chopped mushrooms and cook. They will release some liquid, so leave them on the heat until the mixture is dry. Transfer everything to a bowl and add the ingredients: chopped parsley, crushed rice, breading flour, barbecue sauce, liquid smoke and salt to taste. Mix until you get a homogeneous mixture. Now just shape the burgers into the desired shape.
Heat a frying pan and melt some vegan butter. Grill the burgers on both sides until golden brown and crispy.
Season the arugula as you like. Suggestion: a touch of balsamic vinegar adds a sophisticated flavor. Cut tomatoes into thin slices and sprinkle with a pinch of salt.
Now comes the fun part: assembling! Alternate the layers with the prepared ingredients. Toasted bread, seasoned arugula, crispy burger, sliced avocado, vegan cream cheese, roasted onion, tomato slices... and voilà! Your vegan burger is ready to be enjoyed.
