ONION SOUP

Onion soup

INGREDIENTS:


  • 400g red onion

  • 500g white onion

  • 250 grams of cassava

  • 150g of carrots

  • 1 ½ cups water

  • 1 cup of vegetable cream (substitute for sour cream)

  • 1 cup white wine

  • 6 tablespoons of olive oil

  • 1 cup nutritional yeast

  • Nutmeg to taste

  • Salt to taste

 

Winter has arrived and with it comes the desire for a cozy corner, a steaming soup and a glass of wine in hand. It's the perfect season to cozy up under candlelight and prepare an irresistible recipe — the kind that warms the soul. Host friends at home and indulge in flavors, laughter and good conversations that, without realizing it, become precious memories.

 

First, let's prepare the vegetables for roasting. Start by cutting the white onion, yam and carrot into large pieces. Place everything on a baking sheet and cover with parchment paper or aluminum foil. Bake in a preheated oven at 180 °C until soft.

 

Roasting the vegetables instead of boiling them causes the onions to caramelize, which gives the soup a special flavor!

 

Now it's time to caramelize the red onion. While the vegetables are roasting, cut the red onion in half and then slice it into very thin strips. Place it in a pan with the olive oil and cook over medium heat, stirring occasionally, until it turns golden and soft.

 

When the oven-baked vegetables are ready, transfer them to a blender. Add water, vegetable cream, wine and yeast. Blend until you get a smooth, velvety cream.

 

Transfer the blended mixture to the pan with the red onion, season with salt and nutmeg. Cook over low heat, stirring occasionally, until it comes to a boil.

 

Now just serve — a creamy, aromatic and flavorful soup to warm you up this winter!

 

Tips:


  • I prefer parchment paper because it is environmentally friendly. The planet will thank you!

  • Nutritional yeast is a yellow powder made from an inactive fungus, rich in B vitamins, with a slightly cheese-like flavor — often used in vegan cooking to add a nutritious and flavorful touch to recipes.
