Banana Moqueca
Moqueca de Banana

Ingredients:

 

  • 2 plantains

  • 1 large red onion

  • 1 large green pepper

  • 1 large yellow pepper

  • 3 large tomatoes

  • 1 bunch of coriander

  • 500 ml coconut milk

  • Oil

  • Palm oil – to taste

  • Finger Pepper – to taste

  • Salt – to taste


Start by cutting the bananas into slices approximately 1 centimeter thick. In a frying pan, add a generous drizzle of olive oil and arrange the slices. Let them brown slowly over low heat, turning them so that they brown on both sides.


While the bananas are browning, prepare the other ingredients. Dice the onion, peppers, and tomatoes into medium-sized cubes. This way, they will mix well and release their flavors while cooking.


In a large saucepan, heat a little olive oil and sauté the onion until soft and translucent. Then add the peppers and tomatoes, along with a pinch of salt. Gradually add the coconut milk, stirring constantly so that all the flavors combine harmoniously.


Palm oil has a strong flavor, so add it little by little, tasting and adjusting according to your preference. The same goes for pepper; if you like a spicier touch, feel free to add as much as you like.


Let the mixture simmer for about 10 minutes, so that the ingredients are perfectly combined. When it is ready, add the bananas and, to finish, add the chopped coriander, which adds an incredible freshness and aroma to the dish.

 


Serving Suggestions:


This recipe goes well with both farofa and traditional white rice. Both options are great for complementing the flavors and making the meal even tastier.
